Gingerbread cookies

This was the first time we made actual gingerbread cookies.  Let me tell you they were fantastic!  I googled a few recipes and finally settled on these two, The Joy of Baking and Foodnetwork.  I opted for the foodnetwork one after I had already put in the flour, baking soda, and ginger according to the joy of baking recipe.  Though the amounts are slightly different it didn't negatively affect the cookies.  In fact, I would suggest using more ginger than foodnetwork recipe indicates.  The cookies were delicious.  Soft and fluffy right out of the oven and somehow perfectly soft with a slight crunch after being cooled even days later; Better than any ginger cookies I have ever had.  Try them.
